Egyptian Falafel, or Ta'ameya, is a beloved street food known for its crispy exterior and soft, herb-packed interior. Made primarily from fava beans and aromatic spices, this variation of falafel differs from the chickpea-based version common in other regions. - Prepare the falafel mixture
- Drain the soaked fava beans and rinse them well. In a food processor, combine the fava beans, parsley, cilantro, dill, garlic, and onion. Pulse until the mixture forms a coarse paste. Add coriander, cumin, cayenne pepper (if using), baking powder, and salt. Blend again until smooth but not overly pureed.
- Shape the falafel
- Transfer the mixture to a bowl. Using damp hands, shape the mixture into small patties or balls, about 2 inches (5 cm) in diameter.
- Fry the falafel
- Heat the vegetable oil in a deep pan to 350°F (175°C). Fry the patties in small batches, turning occasionally, until golden brown and crispy, about 3–4 minutes per batch. Remove with a slotted spoon and drain on paper towels.
- Serve hot
- Serve the falafel warm in pita bread with tahini sauce, pickled vegetables, and fresh greens. They’re a perfect appetizer, snack, or light meal!
