South Tirolean Strauben are a classic dessert from Alto Adige. These light, spiral strips of fried batter are made from a subtly flavored dough thatโs rolled ultra-thin, cut into narrow strips, twisted into a spiral, and then fried until perfectly crisp. Finished with a generous dusting of powdered sugar, they offer a delightful crunch and a sweet finish thatโs perfect for festive occasions or everyday indulgence.

3 cups all-purpose flour (375 g)

In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Add the eggs, melted butter, white wine, and vanilla extract; mix until a smooth dough forms.

Transfer the dough to a lightly floured surface and knead until elastic, about 5โ7 minutes. Cover with plastic wrap and let rest for 20 minutes.

Roll out the dough very thinly (about 1/8 inch or 0.3 cm thick). Using a sharp knife or pastry cutter, cut the dough into long, narrow strips approximately 1 inch wide by 8 inches long.
