Description

These Asian Crispy Rice Clouds are a unique twist on traditional rice treats. Puffed rice is gently coated with a warm, sweet syrup infused with coconut oil and a pinch of salt, then mixed with toasted sesame seeds and shredded coconut. Pressed into a pan and allowed to set, these treats deliver a satisfying crunch and an irresistible flavor that captures the essence of Asian-inspired desserts.

Ingredients
    4 cups puffed rice cereal (100 g)
  • 1/2 cup rice syrup (120 ml)
  • 2 tablespoons coconut oil (30 ml)
  • 2 tablespoons toasted sesame seeds (20 g)
  • 1/2 cup shredded coconut (40 g)
  • 1/4 teaspoon salt (1.5 g)
Instructions
  1. Grease a small, square pan or line it with parchment paper.
  2. In a small saucepan over low heat (~250°F/120°C), combine the rice syrup, coconut oil, and salt. Stir gently until the coconut oil is fully melted and the mixture is smooth, about 5 minutes.
  3. In a large bowl, add the puffed rice cereal, toasted sesame seeds, and shredded coconut. Pour the warm syrup mixture over the dry ingredients and stir until evenly coated.
  4. Transfer the mixture into the prepared pan and press it down firmly into an even layer.
  5. Allow the mixture to rest at room temperature for about 30 minutes until set.
  6. Once firm, cut into squares or bars and serve immediately. Enjoy your light and crispy Asian Rice Clouds!
