Egyptian Falafel, or Ta'ameya, is a beloved street food known for its crispy exterior and soft, herb-packed interior. Made primarily from fava beans and aromatic spices, this variation of falafel differs from the chickpea-based version common in other regions. Enjoy these golden bites with pita bread, tahini sauce, or pickled vegetables.

Ingredients
  • 2 cups dried split fava beans, soaked overnight (400 g)
  • 1 cup fresh parsley, chopped (50 g)
  • 1 cup fresh cilantro, chopped (50 g)
  • 1/2 cup fresh dill, chopped (25 g)
  • 4 cloves garlic, minced (12 g)
  • 1 medium onion, chopped (100 g)
  • 1 teaspoon ground coriander (5 g)
  • 1 teaspoon ground cumin (5 g)
  • 1/4 teaspoon cayenne pepper (1 g)
  • 1 teaspoon baking powder (4 g)
  • Salt to taste
Instructions
  1. Prepare the falafel mixture
  2. Drain the soaked fava beans and rinse them well. In a food processor, combine the fava beans, parsley, cilantro, dill, garlic, and onion. Pulse until the mixture forms a coarse paste. Add coriander, cumin, cayenne pepper (if using), baking powder, and salt. Blend again until smooth but not overly pureed.
  3. Shape the falafel
  4. Transfer the mixture to a bowl. Using damp hands, shape the mixture into small patties or balls, about 2 inches (5 cm) in diameter.
  5. Fry the falafel
  6. Heat the vegetable oil in a deep pan to 350°F (175°C). Fry the patties in small batches, turning occasionally, until golden brown and crispy, about 3–4 minutes per batch. Remove with a slotted spoon and drain on paper towels.
  7. Serve hot
  8. Serve the falafel warm in pita bread with tahini sauce, pickled vegetables, and fresh greens. They’re a perfect appetizer, snack, or light meal!
