Fried Shrimp Toast is a popular dim sum dish from Chinese cuisine. Fresh shrimp is blended into a smooth paste and spread over slices of crustless white bread. The bread is then cut into triangles and deep-fried until golden and crispy, creating a delightful contrast of textures and flavors. Serve hot with your favorite dipping sauce.

Ingredients
    1/2 pound shrimp, peeled and deveined, roughly chopped (225 g)
  • 1 egg white, lightly beaten
  • 1 tablespoon cornstarch, to help bind (8 g)
  • 1/2 teaspoon salt, to taste (2.5 g)
  • 1/4 teaspoon white pepper, to taste (1 g)
  • 1 clove garlic, minced (3 g)
  • 1/2 teaspoon sugar, optional (2.5 g)
  • 10 slices white bread, crust removed (approx. 300 g total)
Instructions
  1. Combine the shrimp, egg white, cornstarch, salt, white pepper, garlic, and sugar in a food processor and blend until a smooth shrimp paste forms.
  2. Spread an even layer of the shrimp paste on one side of each bread slice.
  3. Cut each slice diagonally into two triangles and press the paste gently so it adheres to the bread.
  4. Place the prepared toast pieces on a tray and freeze for at least 10 minutes to firm up the paste.
  5. Heat the vegetable oil in a deep pan to 375°F (190°C) and fry the toast pieces in small batches for 1–2 minutes until golden and crispy.
  6. Remove with a slotted spoon, drain on paper towels, and serve immediately with your favorite dipping sauce.
