Indian Samosas are a beloved street food enjoyed worldwide, featuring flaky, golden pastry filled with a spiced potato and pea mixture. Perfect as an appetizer or snack, samosas are a delightful combination of textures and bold flavors. Serve them with chutney for an authentic touch!

Ingredients
  • 2 cups all-purpose flour (250 g)
  • 1/4 teaspoon salt (1 g)
  • 4 tablespoons vegetable oil (60 ml)
  • 1/4 cup water (60 ml)
  • 3 medium potatoes, boiled and mashed (about 1 pound or 450 g)
  • 1/2 cup green peas, boiled (75 g)
  • 1 tablespoon vegetable oil (15 ml)
  • 1 teaspoon cumin seeds (5 g)
  • 1 teaspoon grated ginger (5 g)
  • 1 teaspoon ground coriander (5 g)
  • 1/2 teaspoon ground turmeric (2.5 g)
  • 1/2 teaspoon garam masala (2.5 g)
  • 1/4 teaspoon red chili powder (1 g)
  • 1 tablespoon chopped cilantro (15 g)
Instructions
  1. Prepare the dough
  2. In a large mixing bowl, combine flour and salt. Add the vegetable oil and mix until the mixture resembles coarse crumbs. Gradually add water, kneading until a smooth and firm dough forms. Cover and let it rest while you prepare the filling.
  3. Prepare the filling
  4. Heat 1 tablespoon of oil in a skillet over medium heat. Add cumin seeds and ginger, sautéing until fragrant. Stir in coriander, turmeric, garam masala, and chili powder. Add mashed potatoes and peas, mixing well to coat the vegetables with the spices. Season with salt and stir in chopped cilantro if desired. Remove from heat and let the filling cool.
  5. Shape the samosas
  6. Divide the dough into 5 equal portions. Roll each portion into a ball, then flatten into a circle about 6 inches (15 cm) in diameter. Cut each circle in half to form two semicircles. Shape each semicircle into a cone, sealing the edge with water. Fill the cone with 1–2 tablespoons of the potato mixture, then seal the open edge to form a triangular samosa.
  7. Fry the samosas
  8. Heat oil in a deep pan to 350°F (175°C). Fry the samosas in small batches, turning occasionally, until golden brown and crispy, about 5–7 minutes. Remove with a slotted spoon and drain on paper towels.
  9. Serve hot
  10. Enjoy your samosas warm with tamarind or mint chutney for dipping. They’re a perfect snack or appetizer!
