Description

Italian Fried Frappe, also known as Chiacchiere, are a classic Italian dessert featuring thin, delicate pastry that’s deep-fried until perfectly crisp and then generously dusted with powdered sugar. Traditionally enjoyed during Carnival celebrations, these sweet treats are delightfully light and irresistible any time of the year.

Ingredients
    3 cups all-purpose flour (375 g)
  • 2 large eggs (approx. 100 g)
  • 1/4 cup granulated sugar (50 g)
  • 1/4 cup unsalted butter, melted (60 g)
  • 1/2 teaspoon salt (2.5 g)
  • 2 tablespoons white wine (30 ml)
  • 1 teaspoon vanilla extract (5 ml)
  • 2 cups vegetable oil, for frying (500 ml)
  • 1 cup powdered sugar, for dusting (120 g)
Instructions
  1. In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Add the eggs, melted butter, white wine, and vanilla extract, and mix until a rough dough forms.
  2. Transfer the dough to a lightly floured surface and knead until smooth and elastic, about 5–7 minutes. Cover with plastic wrap and let rest for 20 minutes.
  3. Roll out the dough very thinly (about 1/8 inch or 0.3 cm thick). Cut into long strips or desired shapes using a knife or pastry cutter.
  4. Heat the vegetable oil in a deep frying pan or deep fryer to 375°F (190°C). Fry the dough pieces in small batches for 30–45 seconds per side until crisp and golden.
  5. Remove the fried frappe with a slotted spoon, drain on paper towels, and while still warm, dust generously with powdered sugar. Enjoy immediately!
