Italian Fried Polenta transforms a smooth, buttery polenta into golden, crunchy sticks. The polenta is simmered with water, salt, and butter until tender, then poured into a dish to set until firm. Once chilled, it is cut into sticks, lightly dredged in flour, and deep-fried to perfection. 1 cup polenta (cornmeal) (150 g)

Instructions

  1. In a medium saucepan, bring the water to a boil with the salt. Gradually whisk in the polenta, then reduce the heat and simmer for about 25–30 minutes until the mixture thickens and the polenta is tender; stir in the unsalted butter until fully incorporated.
  2. Pour the hot polenta into a lightly greased baking dish, spreading it evenly, and allow it to cool at room temperature for about 30 minutes until firm (or refrigerate for 15–20 minutes to speed up the process).
  3. Once set, cut the polenta into sticks approximately 1/2 inch thick.
  4. Lightly dredge each polenta stick in the all-purpose flour, shaking off any excess.
  5. Heat the vegetable oil in a deep frying pan to 375Β°F (190Β°C) and fry the polenta sticks in small batches for 3–4 minutes until they are golden and crispy.
  6. Remove the fried polenta sticks with a slotted spoon, drain on paper towels, and if desired, sprinkle with grated Parmesan cheese.
