Italian Frittole are a classic Carnival dessert from Italy. These airy fritters are made from a rich, egg-based dough enhanced with granulated sugar, lemon zest, and plump raisins. Fried to a perfect golden crisp and generously dusted with powdered sugar, they capture the festive spirit of Carnival with every bite.

  1. In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Add the eggs, milk, melted butter, and lemon zest, and mix until a smooth, homogeneous dough forms.
  2. Stir in the raisins evenly throughout the dough. Cover the bowl with plastic wrap and let the dough rest for 30 minutes.
  3. Meanwhile, heat the vegetable oil in a deep frying pan or deep fryer to 375°F (190°C).
