Description

Italian Frittole are a classic Carnival dessert from Italy. These airy fritters are made from a rich, egg-based dough enhanced with granulated sugar, lemon zest, and plump raisins. Fried to a perfect golden crisp and generously dusted with powdered sugar, they capture the festive spirit of Carnival with every bite.

Ingredients
    3 cups all-purpose flour – (375 g)
  • 1/2 cup granulated sugar – (100 g)
  • 4 large eggs – (approx. 200 g)
  • 1/4 cup milk – (60 ml)
  • 1 teaspoon baking powder – (5 g)
  • 1/2 teaspoon salt – (2.5 g)
  • 1 of Zest lemon – (approx. 1 tablespoon, 5 g)
  • 1/2 cup raisins – (75 g)
  • 2 tablespoons unsalted butter, melted – (30 g)
  • 2 cups vegetable oil, for frying – (500 ml)
  • 1 cup powdered sugar, for dusting – (120 g)
Instructions
  1. In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Add the eggs, milk, melted butter, and lemon zest, and mix until a smooth, homogeneous dough forms.
  2. Stir in the raisins evenly throughout the dough. Cover the bowl with plastic wrap and let the dough rest for 30 minutes.
  3. Meanwhile, heat the vegetable oil in a deep frying pan or deep fryer to 375°F (190°C).
  4. Using two spoons or a small ice cream scoop, drop small portions of the dough into the hot oil, frying in batches for about 1–2 minutes per side until the frittole are puffed up and golden brown.
  5. Remove the frittole with a slotted spoon and drain on paper towels. While still warm, dust them generously with powdered sugar.
