Sardinian seadas are a traditional Italian dessert from Sardinia. These delightful treats feature a delicate, crispy dough filled with a savory-sweet mixture of grated pecorino cheese, lemon zest, and a hint of sugar. Once fried to a perfect golden-brown, they are finished with a generous drizzle of honey, creating an irresistible blend of textures and flavors.

In a large bowl, mix the flour, salt, olive oil, and water until a smooth dough forms; cover and let it rest for 30 minutes.

In a separate bowl, combine the grated pecorino cheese, lemon zest, and granulated sugar.

On a lightly floured surface, roll out the dough into circles about 8 inches (20 cm) in diameter.

Place a generous spoonful of the cheese filling onto one half of each dough circle, then fold the other half over to form a half-moon shape, pressing the edges firmly to seal.

Heat the vegetable oil in a deep pan to 375°F (190°C) and fry the seadas in small batches for 2–3 minutes per side until they turn golden and crispy.
