Sardinian seadas are a traditional Italian dessert from Sardinia. These delightful treats feature a delicate, crispy dough filled with a savory-sweet mixture of grated pecorino cheese, lemon zest, and a hint of sugar. Once fried to a perfect golden-brown, they are finished with a generous drizzle of honey, creating an irresistible blend of textures and flavors.

Ingredients
    4 cups all-purpose flour (500 g)
  • 1/2 teaspoon salt (2.5 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 cup water (240 ml)
  • 2 cups grated pecorino cheese (200 g)
  • 1 of Zest lemon (approx. 1 tablespoon, 5 g)
  • 1 tablespoon granulated sugar (12.5 g)
  • 2 cups vegetable oil, for frying (500 ml)
  • 1/2 cup honey, for drizzling (170 g)
Instructions
  1. In a large bowl, mix the flour, salt, olive oil, and water until a smooth dough forms; cover and let it rest for 30 minutes.
  2. In a separate bowl, combine the grated pecorino cheese, lemon zest, and granulated sugar.
  3. On a lightly floured surface, roll out the dough into circles about 8 inches (20 cm) in diameter.
  4. Place a generous spoonful of the cheese filling onto one half of each dough circle, then fold the other half over to form a half-moon shape, pressing the edges firmly to seal.
  5. Heat the vegetable oil in a deep pan to 375°F (190°C) and fry the seadas in small batches for 2–3 minutes per side until they turn golden and crispy.
  6. Remove the seadas with a slotted spoon and drain on paper towels.
  7. Drizzle with honey while still warm and serve immediately.
