Description

South Tirolean Strauben are a classic dessert from Alto Adige. These light, spiral strips of fried batter are made from a subtly flavored dough that’s rolled ultra-thin, cut into narrow strips, twisted into a spiral, and then fried until perfectly crisp. Finished with a generous dusting of powdered sugar, they offer a delightful crunch and a sweet finish that’s perfect for festive occasions or everyday indulgence.

Ingredients
    3 cups all-purpose flour (375 g)
  • 2 large eggs (approx. 100 g)
  • 1/4 cup granulated sugar (50 g)
  • 1/4 cup unsalted butter, melted (60 g)
  • 1/2 teaspoon salt (2.5 g)
  • 2 tablespoons white wine, optional (30 ml)
  • 1 teaspoon vanilla extract, optional (5 ml)
  • 2 cups vegetable oil, for frying (500 ml)
  • 1 cup powdered sugar, for dusting (120 g)
Instructions
  1. In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Add the eggs, melted butter, white wine, and vanilla extract; mix until a smooth dough forms.
  2. Transfer the dough to a lightly floured surface and knead until elastic, about 5–7 minutes. Cover with plastic wrap and let rest for 20 minutes.
  3. Roll out the dough very thinly (about 1/8 inch or 0.3 cm thick). Using a sharp knife or pastry cutter, cut the dough into long, narrow strips approximately 1 inch wide by 8 inches long.
  4. Twist each strip lightly to form a spiral shape, then place them on a parchment-lined tray.
  5. Heat the vegetable oil in a deep frying pan or deep fryer to 375°F (190°C). Fry the dough spirals in small batches for 30–45 seconds per side until crisp and golden.
  6. Remove the strauben with a slotted spoon, drain on paper towels, and immediately dust generously with powdered sugar.
