Ingredients

3 cups all-purpose flour – (375 g)

Instructions

  1. In a large bowl, combine the all-purpose flour and salt. Gradually mix in the olive oil and warm water until a smooth dough forms. Knead lightly on a floured surface, then cover with plastic wrap and let rest for 10 minutes.
  2. Meanwhile, prepare the filling. In a large skillet, sauté the chopped onion, red bell pepper, and minced garlic over medium heat until softened, about 5 minutes. Add the diced tomatoes, drained tuna, green olives, smoked paprika, dried oregano, salt, and pepper. Simmer the mixture for 10 minutes until slightly thickened. Remove from heat and allow to cool.
  3. Preheat the oven to 400°F (200°C). On a lightly floured surface, roll out the dough until very thin. Cut the dough into 8 large circles (about 8–9 inches in diameter).
  4. Spoon an even amount of the tuna filling onto the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges firmly to seal, using your fingers or a fork.
  5. Place the empanadas on a parchment-lined baking sheet. Brush the tops with beaten egg for a glossy finish.
  6. Bake in the preheated oven for 20 minutes, or until the pastry is golden and crisp.
