Patatas Bravas are a classic Spanish tapa, offering tender, golden potatoes paired with a vibrant, spicy tomato sauce. This dish combines perfectly fried potato cubes with a zesty sauce spiked with smoked paprika and red pepper flakes. Ideal as an appetizer or a snack, these flavorful bites bring a true taste of Spain to your table.

Ingredients
    1.5 pounds potatoes, peeled and cut into 1-inch cubes
  • 2 cups vegetable oil, for frying
  • 2 tablespoons olive oil, for sauce
  • 1 small onion, finely chopped (100 g)
  • 2 cloves garlic, minced (6 g)
  • 1 can crushed tomatoes, preferably San Marzano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon sherry vinegar, optional
  • 1/2 teaspoon salt, plus extra for seasoning potatoes
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, for garnish
Instructions
  1. Peel and cut the potatoes into 1-inch cubes; rinse and pat dry with paper towels.
  2. Heat the vegetable oil in a deep pan to 375°F (190°C). Fry the potato cubes in batches until golden and crisp, about 8–10 minutes per batch. Remove with a slotted spoon and drain on paper towels; season lightly with salt while still warm.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and translucent, about 3–4 minutes.
  4. Stir in the crushed tomatoes, smoked paprika, red pepper flakes, salt, and black pepper. If using, add the sherry vinegar. Simmer the sauce over medium-low heat for about 10 minutes until slightly thickened.
  5. Arrange the fried potatoes on a serving plate, spoon the warm spicy tomato sauce generously over them, and garnish with chopped fresh parsley.
